Rebecca and Lucky Roo will be available on the three arenas, while Urouge is exclusive of the Chaos difficulty.

Rebecca, Colosseum's Exclusive Gladiator
Type: QCK HP: 1,947
Class: Striker ATK: 853
Slots: 3 RCV: 374
Captain Ability: Reduces damage received by 25%
Special (26 -> 16 turns): Deals several times character's ATK in QCK damage to one enemy, changes own orb into QCK.
Damage dealt is calculated with 125x (1 - remaining HP/total HP), so the lower the HP, the higher the damage (up to ~106,000)
Rebecca is one of the first characters being introduced to the Coliseum. She isn't exactly a great unit, her stats are not that much and her abilities aren't either.
As a captain, she won't probably see much use. However, her special is somehow interesting. Based on the HP you have left, she deals decent damage to one enemy. It's not as powerful as Monster Chopper's or Log Luffy's specials, for example, but it's still nice damage. Plus, she changes her own orb to QCK, which is always nice.
All in all, not the best unit and she won't most likely be used, except in a few situation or fun teams.
FIRST ROUND - NAVY CAPTAIN
Not much to say about this one, use GP Usopp and you'll have enough turns to beat them.
SECOND ROUND - YAMA
HP: 2,500,000 (approximately)
ATK: 14,202
Preemptive: ATK/DEF up for 4 turns
Every 4 turns: Attacks for 14,202
HP < 33%: Deals 15,000 damage
NOTE: Streaming Wolf Zoro will be really helpful here if you cannot kill him within 4 turns
THIRD ROUND - BELLEMERE
HP: 2,000,000 (approximately)
ATK: 3,995 (1 turn interval)
Turn 2+ - Locks random unit for 3 turns
NOTE: Anti Lock level 3 recommended.
GP usopp maxed will be useful
FOURTH ROUND - ABSALOM
HP: 1,000,000 (approximately)
ATK: 5,886 (2 turns interval)
Preemptive: Blinds for 4 turns
Turn 2: Changes all orbs into BOMB (recommended to MISS)

FINAL ROUND - REBECCA
NOTE: Anti-lock level 2 will be useful, but not necessary
Stage 1
1 QCK giant and 2 mobs
The giant will preemptively lock 1 random unit for 2 turns
Stall here without taking damage and try to save some food orbs
Stage 2
3 boxer mobs + 2 INT cannoneers
Stall here without taking damage and try to save food orbs
Stage 3
4 mobs + 1 damyo turle
The 2 QCK mobs in the back that will lock DEX characters upon attacking for 2 turns.
The turtle has 30 HP and hits for 2,550.
Stall in the turtle and try to use food orbs to heal what you've lost
Stage 4 - Absalom (Miniboss)
HP: 1,000,000
Attack pattern:
Preemptive - Blinds you for 5 turns (recommended using GP Usopp here)
Turn 1 - Swaps orbs to bomb (highly recommended to miss here, since you are blinded, unless you used Mansherry's special)
Every 2 turns - Attacks for 5,886
Turn 4 - Boost ATK (to 6,500) and DEF. Prevents Debuffs
Boss Stage - Rebecca
HP: 3,000,000
Attack Pattern:
Preemptive - Prevents stalling for 99 turns
Turn 2 - Counters (a lot of the) damage dealt to here
Turn 4+ - Attacks every turn for 5,880
HP < 20% - Deals 50,000 damage
Note:
It's recommended to burst her down in 2 turns, since she will one shot you (unless you miss with GP Usopp until she counters). However you can stall on her if you have 3D2Y Franky or CP9 Kalifa (under 10% HP) specials

Gear 3 teams are not recommended since you get blinded for 5 turns in stage 4, which can compromise your run
A tanky slasher team, with GP Usopp for stage 4 and Marco for healing purposes on Rebecca's stage.
You need max special on GP Usopp and Doffy, Marco and Hawk should be around 20 turns at least.
Brook can be replaced for a DEX slasher such as Ashura Zoro or Law
On Rebecca's stage miss with GP Usopp in the first 2 turns. After that, attack her normally until she's about 20/30%. Use Marco's special to heal if needed.
You have to burst her down before she gets under 20% otherwise she will kill you
Mihawk Slasher Team
This is a common slasher team and works just fine to beat Rebecca.
The remaining spots can be filled with GP Usopp for Absalom or any QCK/DEX character (QCK would be preferable to defeat Absalom, since you already do heavy damage with the DEX units you having, powering with Doffy's and Koza's specials)
Rayleigh Team
Not much to say about this team.
Stall accordingly as stated above and you should be fine.
GP Usopp for Absalom, the rest is to burst Rebecca down in 2 turns
Zephyr Team
Would be an excellent team but, who is Zephyr anyway?
